May is the month to come to Hvar if you want the island rather than the water. The interior is still green — it will be bleached by July — the walking is the best of the year, every heritage site is comfortable rather than punishing, and you will pay the lowest rates of the open season for all of it.
The sea is 17–19 °C. That single number is why May is quiet, and whether it disqualifies the month depends entirely on what you came for.

What May is genuinely best for
The Stari Grad Plain. The UNESCO-listed Greek field system is flat, treeless and completely exposed, and it is the clearest case on the island for a spring visit: at 23 °C it is a lovely morning’s walk between dry-stone walls, and in August it is an ordeal people abandon halfway. The Fortica. Twenty minutes uphill from Hvar Town’s main square. Trivial in May, unpleasant in July.
The inland villages and the old ridge road. Velo Grablje, Brusje, Vrbanj and Svirče are at their best before the heat and before the lavender brings visitors to them. The lavender itself is not out yet — that is June — but the terraces are green and the roads are empty.

The sea, honestly
The Adriatic runs about a month behind the air, and in May that lag is working against you in the most direct way possible.
- Early May: 17–18 °C. Cold-water swimming.
- Mid May: 18–19 °C. Brief and bracing.
- Late May: 20–21 °C. The first properly swimmable water of the year.
If the trip is built around swimming, May is not the month and there is no argument that makes it one. The corollary is worth stating too: it is the reason Dubovica is empty, the reason a villa costs what it costs, and the reason the Pakleni water taxis are not queued.

The timetable change at the end of the month
This is the practical thing to know about May, and it catches people out.
Jadrolinija runs a reduced shoulder timetable through the spring and moves to the full summer schedule towards the end of May. Before that switch there are fewer catamaran sailings a day, the last departure back to Split is earlier, and a day trip from Split that is easy in July may not be possible at all.
Two consequences:
- Check the sailing dates before you plan an arrival or a departure, particularly if you are landing at Split airport late. Split airport to Hvar covers the connection and what to do when the timings do not work.
- A trip in the last week of May behaves like June — full service, rising prices, more people — while a trip in the first week behaves like the shoulder season it is.
The upside of the shoulder timetable is that nothing sells out. You can book a crossing a day ahead all month.
What is not running yet
Less than you would expect, but the gaps are real:
- Boat tours run on a reduced schedule in early May and build through it. The Blue Cave boats in particular may not be daily.
- Some restaurants outside Hvar Town are still shut at the start of the month, especially in the smaller north-coast and south-coast villages.
- Beach bars and seasonal kiosks largely do not exist yet.
None of this affects a trip built around the towns, the plain and the villages. It affects a trip built around a specific boat, so confirm that boat is operating before you book flights around it.
When to book a May trip
May is the easiest month of the year to book late, and the one where booking early buys the least.
- Villas and apartments: six to eight weeks is comfortable. The constraint is which properties have opened for the season, not competition for them.
- Catamaran tickets: a few days. Nothing sells out on the shoulder timetable.
- Hire car: two to three weeks. The Split fleet is not under pressure.
- Boat tours: confirm the operator is running before you confirm anything else.
- The last week of May: treat as June. Three months for a villa, two weeks for the ferry.

They are closer than the calendar suggests, and one number separates them.

Choose May if you are here to walk, to see the plain and the villages, and to pay as little as possible — and you regard swimming as something that might happen once.
Choose June if you want the lavender, the longest days of the year, and water you will actually get into.
Choose September if the sea is the point. That is not a close call in any comparison on this site.
